Our festive blend coffee is made from a combination of Honduras brandy fermented coffee beans from Central America and China's Yunnan brandy anaerobic coffee beans. It features flavors of lychee honey, lavender, and a gentle, sweet aftertaste, making it the perfect choice for gifting and personal enjoyment.
Honduras Brandy Fermentation
After coffee cherries are picked, they are sent to a washing station to remove the pulp and parchment. The clean coffee is then placed in a fermentation tank, where it ferments at a low temperature (15-20℃) for 30-40 days. This microbial process gives the coffee beans a fruity, wine-like flavor. The final step is drying.
After 30 days, the coffee is removed from the tank and laid out on drying beds. It takes 4-6 days for the coffee to dry, reducing its moisture content to 11-12% for export.
Yunnan Puer Brandy Honey Process
The Yunnan Puer Brandy Honey Process uses brandy honey. After washing the freshly picked cherries, they are stored in an oxygen-free container for 24 hours of anaerobic fermentation. Then, the cherries are sun-dried for 3 days before undergoing another 48 hours of anaerobic fermentation. This process gives the coffee a rich aroma and smooth aftertaste.
The coffee beans from Yunnan, processed with brandy honey, undergo multiple fermentation steps, resulting in a flavorful and smooth profile.
